Abstract The aging of the population has been a characteristic of our country’s demographic evolution in recent years. It is marked by a decrease of the birth rate and an increase of life expectancy. Although the impact of Covid-19 is not known yet, there is evidence of significant biopsychosocial heterogeneity among the so-called elderly population. There is an increase in fragility and vulnerability that may hinder the achievement of healthy eating goals, which is further complicated if we consider the necessary supply of energy and nutrients and the therapeutic role of food, as well as relational and sociability aspects. Moreover, these goals are difficult to achieve if they do not take into account person-centered care (PCA) and do not consider social and health aspects, regardless of the place where elderly people live. The paper concludes with a brief summarized overview of different aspects of the food circuit, together with possible lines of work for improving its effectiveness and efficiency.
