Abstract

Climate change will be affecting different aspects of people’s lives on our planet. One of the most important of these aspects involves human nutrition and, more specifically, the safety of the food that we consume. Temperature, in particular, is decisive for the growth of microorganisms. At higher temperatures, microorganisms grow faster, and there is a direct relationship between the number of microorganisms and the presence of enteric pathogens. In this respect, a significant rise is expected in outbreaks of foodborne diseases due to Salmonella, but there will also be an increase in parasitic diseases and in some viruses, especially enteroviruses. This will require a major effort to control the conditions that allow these pathogens to reach food, ensuring suitable temperatures for food maintenance and cooking, and appropriate management of hygiene measures in food handling and processing.
