Abstract

Commercial poultry industry routinely feeds carotenoids, particularly xanthophylls (lutein and capsanthin primarily), to egg laying andmeat-producing chickens to enhance their pigmentation and productmarketability. Over the last 10 years, there has been increased awareness of the role of xanthophylls in human health, and in particular the roles of lutein and zeaxanthin in prevention of certain eye disorders, such asmacular degeneration and cataracts. Other biological functions that have been associated with carotenoids are cancer prevention (mainly breast and lung cancer) and cardiovascular disease prevention. It has been shown that lutein bioavailability fromeggs is higher than that from other sources such as free lutein and lutein ester supplements, or vegetable sources, such as spinach. In addition, recent evidences also suggest it has an important role on the immune response, as has been demonstrated in other animal species.
