Abstract

This work presents the experimental results, on the olive oil of the arbequina variety in the Garrigues region, of the different irrigation conditions in two successive campaigns and the influence of climatic conditions in eight campaigns. The polyphenol and pigment content are themost influenced parameters, and the other quality characteristics are independents of the hydric and climatic conditions.
