Abstract

Historical progress in modern age on scientific knowledge of nutrition, both human and animal, is a strain of proposals, experimental data and findings about the functions of food components, such as vitamins and proteins.Most advances have resulted from experimentation on animals, which conclusions had been applied to humans. The knowledge of the food contribution to the body energy, the assimilation processes of amino acid and minerals, such as Ca and P, have been essential references for the design of livestock feed, which in the last decades has been improved by means of Informatics and linear software applied to its formulation. The contribution of Chemistry to explain mechanisms of assimilation of nutrients, paced in the last quarter of xx century, the research of applied food additives, antibiotics, hormones and beta-antagonists, with outstanding results, but with so much controversial than even had been forbidden after mass media campaigns with poor scientific treatment.
