Abstract

Identification of several typologies of consumer as well as food and beverage mass market targets is discussed. The consumer concept for decision making on food should not be analysed only on legal or industrial aspects but on the targeted consumer perceptions. Food quality is not restricted to technical and sanitary regulations, but should be stretched to industrial performance as well as consumer and retailer information and recommendation, bearing in mind that quality and safety should mandatory.
