Abstract

In these recent years of XXI century, several surveys focused on immigration and food trends have appeared. The aim of those studies is related in particular to the fields of economy (immigrants turned to be an «interesting» target of consumers), ethnic gastronomy or exotic food, and health (immigrants may show potentially specific nutritional risks that should be identified and attended).
