Abstract

The expression «flavour of landscape», although metaphorical, summarizes a certain culinary will that arosed in the nouvelle cuisine. Through the concept of authorship, it will lead to the notion of the chef as an artist. In this article, the episodes that conceptually approached the haut cuisine to the environment where the restaurant was located will be contextualized. An attempt will be made to understand the relevance of the gastronomic restaurant’s format and its technical mechanisms in the formation of an artistic image of it. Thus, it will be understood how the diner can possibly be doubly lost before said image, thus being able to savor the landscape.
