Abstract The application of the results of research in agriculture and food production is the subject of debates that are particularly complex in Europe. It has been proposed that the essential aims of the research that will be applied to agriculture should be especially to secure access to sufficient and safe foods for current and future populations. Consideration should also be given in the debates to the need to have the best possible information while bearing in mind the conflicts of interest that may arise. Within this framework we may discuss how to make use of the enormous wealth of information that we are getting on species on which our agriculture and our animal farming are based to help to address the global challenges we are facing. We may ask ourselves about the ethical criteria that may take into account the different actors involved in these debates, such as scientists, industrialists and farmers, as well as politicians and journalists.Keywords: ethics, agriculture, food.
