Abstract

The concept of volatility is intrinsic to agriculture prices. At the same time the volatility of food prices has a strong capacity to produce an economic, social and politic desestabilization. For this reason, agricultural policy has traditionally considered volatility control as its utmost priority. In recent years, agricultural markets that have become more global, more liberal and more involved in economic crises are stressed and their volatility has considerably increased. Nevertheless, volatility is not the only factor behind farmers profit-making difficulties. Consequently, the article analyses the different causes related to price variability and farmers profit losses and it exposes the different policies to tackle the issue.
