Abstract Sites dedicated to wine production have been changing in time. This paper broadly reviews the evolution of these sites from Roman times until today. For centuries, the function of cellars exclusively consisted of production. Nonetheless, in recent years, they have become a voice of the brand and a touristic attraction.
