Abstract

The Arbúcies valley is committed to the recovery of its local olive tree variety called Salar d’Arbúcies, which provides high-quality olive oil. This endeavour is based on three research projects subsidized by the Department of Agriculture, Livestock, Fisheries and Food of the Government of Catalonia (DARP) and the European Agricultural Fund for Rural Development (EAFRD). The olive tree recovery project of Salar d’Arbúcies identifies the territory on the basis of this unique high-value product that allows recovery of the land of the valley, making it a social project that ties in with and increases the local agri-food supply in the area around Montseny Natural Park, a biosphere reserve environment. To promote the project, we must consider the challenge of providing value by fostering the description and knowledge of the parameters of quality of high-end extra virgin olive oil. Developing the International Olive Council (IOC) regulations with the contribution and description of the sommeliers in order to transform the normative language into emotional language, the price of high-quality extra virgin olive oil is justified and this oil is associated with pleasure and health. This distinctive features of Salar d’Arbúcies olive oil are supported by a mark certifying their values.
