Peculiaritats del terrer de l'Empordà Authors Simó Serra Pumarola Abstract El terrer o el terroir, com és anomenat sovint per la influència dels estudis fets a França sobre viticultura, és un terme d'una dimensió que pot ser més o menys àmplia i que valora les aptituds vitícoles naturals d'un terreny, acompanyat sempre de les pràctiques de conreu que hi practiquen els qui l'exploten, guiats pel «saber fer», que acostuma a barrejar l'antigor amb la modernitat més profitosa. El terrer és, doncs, un conjunt de factors complex que el defineixen i el conformen: Subsòl. Sòl. Factors químics constitutius. Factors climàtics. El terrer de l'Empordà comprèn l'Alt i el Baix Empordà, amb una extensió d'unes 1.800 ha de vinya conreada per uns tres-cents viticultors, i conté terrers ben heterogenis, per la qual cosa resulta imprescindible, a l'hora de definir-lo, tenir en compte: La formació geològica del seu subsòl, les característiques variades de la plana (sorrenca, argilosa, gravosa... ). L'estructura del sòl. El clima: temperatures i hores d'insolació. El factor hídric, tan determinant per a la disseminació de les afeccions criptogàmiques. Les tècniques de conreu de la comunitat vitivinícola i l'adaptació a la modernitat. Les varietats esdevingudes gairebé autòctones de l'Empordà. Tots aquests factors s'aniran desgranant per acabar de definir el terrer de la nostra comarca, per saber quins constituents fan que es pugui considerar homogeni en el seu conjunt, tot i tenir en compte la seva particular heterogeneïtat (fortament influenciada per les condicions locals) i la dimensió cultural de la gent que l'explota. Intentarem d'estudiar, doncs, un espai concret que, sota la influència de diferents factors, permet d'aconseguir un producte concret i genuí.
