Il Torbato e la sua vinificazione in Sardegna Authors Giovanni Pinna Abstract Tradicionalment el torbato és un cep cultivat a la zona de l'Alguer. Durant molt de temps s'havia vinificat a la manera tradicional local i el seu vi era per al consum dels mateixos pagesos productors. Només els cellers Sella & Mosca han cregut fortament en aquesta varietat. La recerca realitzada per aquesta empresa, que ha desenvolupat protocols vitícoles i enològics validats, ha permès superar les dificultats culturals lligades a una maduració tardana del raïm i al seu contingut en sucre, entre altres aspectes. L'experiència i la utilització de tecnologia moderna han permès arribar a una producció de quasi un milió d'ampolles, distribuïdes en cinc productes diferents. La denominació Alghero Torbato obliga que totes les operacions de vinificació i envelliment s'hagin de fer a les mateixes instal·lacions. A l'article s'expliquen les diferents fases que es duen a terme per a aconseguir una òptima vinificació per tal d'obtenir productes tan diversos com vi escumós, vi tranquil jove i vi envellit.
