Il Torbato in Sardegna Authors Stefano Biscaro Abstract El torbato és una varietat de raïm blanc que pertany al grup de les malvasies i té com a sinònim malvasia del Rosselló. Va arribar a Sardenya quan el rei Pere IV el Cerimoniós va conquerir l'Alguer a final del 1300 i aquesta ciutat va esdevenir una avançada de la cultura catalana fora de la península Ibèrica. Històricament el torbato és citat a Sardenya per pocs autors, el primer dels quals és Manca (1780), que l'anomena razola, Vitis iberica, trubat iberica, uva catalana, torbat, turbato. Les característiques ampelogràfiques han estat molt ben descrites per Bruni (1966). El torbato es cultiva a Itàlia únicament a Sardenya i concretament a l'Alguer, on els cellers Sella & Mosca en conreen el 96 % del total, o sigui, unes 150 hectàrees que produeixen uns 7.000 hectolitres de vi. A Itàlia no se'n troben clons descrits; en canvi, a França amb el nom de tourbat existeixen tres clons homologats per l'Établissement National Technique pour l'Amélioration de la Viticulture (ENTAV) que són originaris de Sardenya; Sella & Mosca té la seva pròpia selecció genètica. A la comunicació s'explica les característiques vitícoles del cep, així com el procés bioquímic del seu most fins a arribar a vi. El torbato és una varietat de cep que produeix un vi que ha sabut trobar un lloc en el mercat. Cal destacar l'àmplia oferta de productes gràcies a les seves possibilitats de vinificació, que van des de vins tranquils joves fins a vins envellits i vins escumosos.
